Creamy Butter and Herb Sweet Potatoes
These creamy butter and herb sweet potatoes are so delicious. I’m not going to lie. They are literally swimming in butter and heavy cream. So, what can’t be delicious about them? The sweetness of the cream and sugar along with the butter and herb creates a perfect flavor combination. This recipe is also so simple to make. All there is to it is peeling and slicing your potatoes, melting butter and adding in the herbs and cream, pouring it on top, then baking for 30 minutes. So simple. This can also be a perfect new twist on traditional Thanksgiving sweet potato recipes.

Equipment You Will Need
The main equipment that you’ll need for this recipe is a vegetable peeler, sharp kitchen knife, cutting board. The latter part of the recipe requires a small pot and a casserole dish. I used my Staub 9″ oval casserole dish. You don’t have to use this particular shape and size. I mention in the recipe below that a 9″ x 9″ square dish would work just as well. I just really love my oval dish.
Ingredients You Will Need
Sweet Potatoes:
I used 4-5 medium sized sweet potatoes. I peeled them and then sliced them with a sharp kitchen knife. I love sweet potatoes all year round, but these would also make a perfect Thanksgiving yams recipe.
Butter:
Butter. Yes, butter and lots of it. Like I said above, these potatoes are practically swimming in butter. Do not recommend making this recipe if you are trying to diet.
Minced Garlic:
I used a tablespoon of minced garlic in my melted butter. I felt like it really added to the savory herb flavor.
Fresh Herbs:
I used fresh thyme, basil, and parsley. I felt like this combination was perfect. However, you could use dried herbs, but fresh would work best and give a better overall flavor.
Heavy Cream:
This added a decadent richness to the recipe. The hint of sweetness really brought out the flavor of the “sweet” potaotes.
Sugar:
Just a hint of sugar really complimented the heavy cream.
Step by Step How to Create These Creamy Butter and Herb Sweet Potatoes
Step 1
Preheat your oven to 400 degrees. Peel about 4-5 medium to large sweet potatoes. Slice them to about 1/4 of an inch thickness. Layer them au gratin style in your greased casserole dish.
Step 2
In a small pot, melt butter on medium heat. Add in your minced garlic and herbs. Let it bubble and come together, then remove from heat. Add in heavy cream and sugar and mix thoroughly. Pour over sweet potatoes. Flip your potatoes around to ensure they all get nicely coated.
Step 3
Bake for 30 minutes. Remove from heat and garnish with more fresh herbs if desired. Serve warm and enjoy!
