Easy Western Skillet Baked Pancake

This easy western skillet baked pancake is such an easy breakfast recipe. The fluffiness from the homemade pancake batter, added with the savory flavor of the ham, cheese and vegetables is the perfect combination.

The recipe that I used is the pancake recipe that I grew up on. I mixed the batter as I normally would when making typical pancakes then added in the additional ingredients. There are no rules when it comes to this. Honestly, you could add in any ingredients you’d like. However, I love this western rendition. I guess it’s just how I was raised, but I feel like I used my cast iron skillet for almost everything. When I moved to college, my Granny bought me the one you see in my pictures. It’s a 9″ square pan. These are super hard to find. I’ve tried to find them for gifts and have been unsuccessful. I’ve listed some other great round options.

Dry Ingredients

The first step of your recipe is that you will be mix your dry ingredients together. This is your flour, baking powder, sugar, and salt.

  • 1 cup Flour
  • 2 tbsp Baking Powder
  • 2 tbsp Sugar
  • pinch Salt

Wet Ingredients

You’ll then gather and mix together your wet ingredients. This your milk, oil, and eggs.

  • 1 Egg
  • 2 tbsp Oil (I used extra light tasting olive oil)
  • 1 cup Milk

Fillings

There are no rules with it comes to filling your pancake batter. I used the ingredients listed, but you can easily add or subtract any.

  • 1/2 cup Shredded Cheese
  • 1/2 cup Diced Ham
  • 1/2 cup Sliced Mushroom
  • 1/4 cup Diced Onion
  • 1/4 cup Diced Bell Pepper
  • 1/4 cup Green Onion

Step by Step How to Make this Easy Western Skillet Baked Pancake

Step 1

Preheat your oven to 375 degrees. In a mixing bowl, mix together your dry ingredients. This is your flour, baking powder, sugar, and salt. In a separate bowl, mix together your milk, egg, and oil. Whisk thoroughly until there are no clots.

Step 2

Add in all of your fillings to your batter. This is your ham, cheese, peppers, mushrooms and onions. Pour the batter into a greased 9″ cast iron skillet. Bake at 375 for 25-30 minutes. The pancake should be golden brown on top, and a toothpick should come out clean when stuck into the center. Serve warm and enjoy!
