These easy baked chicken foil packets are one of my favorite dinner go-tos. All you do is place your chicken, vegetables and some seasoning in some foil. Wrap it up, and let it bake. It’s so simple and cleanup is a breeze. The chicken comes out so tender, and the flavors of all the veggies create the most delicious flavor.
Why You’ll Love These Chicken Foil Packets
It’s Mess Free
This chicken in foil recipe is so mess free. You put everything in the foil, then simply throw it away after!
It’s Perfect for Leftovers
These are so easy for leftovers. However, I would store them in the refrigerator on top of a paper plate or some sort of plate in case any of the juices leak out.
Questions You Might Have:
What vegetables can I use?
Any and all vegetables you’d like. I typically don’t make this the same every time. This is a good sweep the fridge or panty recipe. Buy what you want or use what you have.
Can I substitute for other meats?
Sure! I don’t see why not. I have seen this done a lot for hamburger patties. This would even work for pork chops. I would just be mindful of cooking times. Always have a thermometer handy and make sure your meat is always cooked to temp.
Can I use a different cut of chicken?
Like I said above, I would just be mindful of cooking times. Always have a thermometer handy and make sure your meat is always cooked to temp. This especially goes for bone-in chicken recipes. Bone-in chicken can take longer to cook.
Can I make this in a crockpot?
Sure! I would assemble them the same, place a little water in the bottom of the crockpot, then cook on high for at least 8 hours.
How long to bake chicken breast at 400 in foil?
I typically like to cook at 400 for least 30 to 45 minutes when making baked chicken in foil recipes. I feel like that give the chicken plenty of time to cook, and also get basted in the delicious veggie juice and seasonings. If you’re unsure, you can always take out the packets to see if the squash is cooked and the chicken has reached an internal temperature of at least 165 degrees.
How long will these keep in the fridge?
I would say 5 days? Definitely do not store any longer than 7 days.
Equipment You Will Need
What I love so much about this recipe is honest all your technically need is some tin foil. I like to set my packets on top of a baking sheet just in case they may leak out, so the bottom of my oven doesn’t get dirty. I have these foil and wrap holder in a drawer in my kitchen and I love it!
Ingredients You Will Need
Chicken Breasts:
I used 3 large chicken breasts and cut them long ways into smaller strips. Remember to trim off any excess fat.
Vegetables:
Anything goes when adding vegetables to these foil packets. I always love onion, squash, potatoes, carrots and mushrooms.
Olive Oil:
I drizzled about 2 tablespoons of olive oil in each packet.
Seasonings:
You’ll need a simple blend of seasonings for this chicken foil packets. I used salt, pepper, garlic and onion powder.
Step by Step How to Make These Baked Chicken Foil
Step One
Preheat your oven to 400 degrees. Cut your breasts in half down the middle and remove any excess fat off of them. Tear off 6 pieces of foil, each about a foot long. Add the pieces of chicken to the center of each piece of foil and manipulate the foil into a bowl-like shape.
Step two
Slice all of your vegetables into bits. Drizzle about 1-2 tablespoons of olive oil in each packet. Mix all of your seasonings together in a bowl then add 1-2 teaspoons into each packet.
Step three
You’ll then fold in two side together to the center. Then take the other two sides and roll them up until it makes a bag-like shape. Try not to let it have any holes in it so the steam will stay inside. Bake at 400 for at least 45 minutes or until the chicken reaches 165 internally. Serve right out of the packet and enjoy!
