Easy Taco Chili with Macaroni
This easy taco chili with macaroni is the simplest dinner recipe. I love it because it’s a one pot dish. Literally, throw all the ingredients in the pot and there you have it. Brown your meat. Add in some chopped veggies. Some canned tomatoes, beans and corn. Two packets of seasoning and that’s it! It’s so easy. You could make this recipe with or without the macaroni. It’s up to you! It’s also a perfect meal to feed a crowd. Read along to see how I made this easy one pot dish in a few easy steps.
Equipment You Will Need
You won’t need anything but a spoon and big pot for this recipe. I mean, ok. Technically, you’ll also need a knife for chopping your pepper and onions. I used a 7.5L pot. I felt like it was plenty big enough. I stored my leftovers in my big pot in the refrigerator. It’s also super easy to clean afterwards.
Ingredients You Will Need
Ground Beef:
You’ll brown two pounds of ground beef. I used ground chuck, but you can use any fat percentage you’d like.
Chopped Onion and Green Bell Pepper and Minced Garlic:
While the beef if browning, I added in half of each of an onion and green bell pepper and come minced garlic. I felt like they added in some much needed rich flavor.
Canned Petite Diced Tomatoes:
I used a big can of petite diced tomatoes. This will be the tomato base of your taco chili. The tomatoes will simmer down some, and there won’t be too many big chunks of tomatoes throughout.
Canned Roasted Corn:
I used a can of fire roasted corn. I like the flavor of the roasted corn, but if you don’t have it, regular kernel corn will work just fine.
Canned Pinto and Kidney Beans:
I am a “beans in my chili” kinda girl. These were a no brainer.
Taco Seasoning:
The main thing that I love about this recipe is that two packets of taco seasoning is sufficient. You don’t have to add any more salt, pepper, garlic, etc. It’s the perfect amount. Easy!
Beef Broth:
I added in two additional cups of beef broth. I felt like this added a bit more flavor, and also gave my macaroni some more liquid to cook in.
Elbow Macaroni Noodles:
The macaroni. This is not typical for chili, but I felt like they added a little something extra to the dish. You could definitely leave out the macaroni and eat this chili over rice.
Step by Step How to Make This Easy Taco Chili with Macaroni
Step 1
Brown your ground beef on medium to high heat until it is browned. Add in your chopped onion and bell pepper and minced garlic. Sauté with the ground beef until vegetables are tender.
Step 2
Add in your cans of diced tomatoes, pinto beans, kidney beans, and corn. Also add in your packets of taco seasoning. Let it simmer for around 10-15 minutes on medium to high heat. Your chili will then thicken. Add in your beef broth and macaroni. Bring it to a boil then cover and reduce to low heat. Simmer on low for up to an hour. Serve with various toppings, such as cornbread, cheese, sour cream or peppers. Enjoy!

- 2 cups Elbow Macaroni Noodles
Instructions

- Add in your cans of diced tomatoes, pinto beans, kidney beans, and corn. Also add in your packets of taco seasoning. Let it simmer for around 10-15 minutes on medium to high heat.
