Greek Chicken Meatballs

These Greek chicken meatballs are the perfect twist on a traditional meatball recipe. This are super simple to make and can be served with anything. They are made with ground chicken, breadcrumbs, feta cheese, and an array of fresh herbs. I loved eating them with tzatziki and hummus. This are so different and delicious.
I love these Greek chicken meatballs with feta in them. They are so light; much lighter than what I’m used to around my house! I swear, they can go with so many things. You can put them on a salad or eat them with a creamy orzo, like I did. This recipe makes a lot, and they are even delicious leftover.
Equipment You’ll Need
There’s not a whole lot of equipment needed for this Greek chicken meatballs recipe. You’ll need a large mixing bowl to mix everything in, some measuring cups and a few baking sheets with parchment paper. I love using a cookie scoop with making meatballs. It’s just easy to me. However, if you don’t have one, you can use a spoon.
Ingredients You’ll Need
Ground Chicken:
You’ll need two pounds of ground chicken.
Breadcrumbs:
I used equal parts Italian breadcrumbs and panko breadcrumbs.
Feta Cheese:
I used about three-quarters of a cup of crumbled feta cheese.
Bell Pepper & Onion:
I finely chopped a green bell pepper and a yellow onion and add about half of each to the meatballs.
Minced Garlic:
You’ll need a tablespoon and a half of minced garlic.
Eggs:
You’ll need two eggs.
Seasonings:
As for seasonings, I used salt, pepper, sugar, dill, chives, and parsley.
How to Make Greek Chicken Meatballs
step one:
Preheat your oven to 350 degrees. In a large bowl, combine all of your ingredients. I used my hand to really make sure everything is mixed well together.
step two:
Once everything is mixed well together, line your baking sheets with parchment paper. Take a cookie scoop or a spoon and portion out little golf ball sized meatballs. Repeat until all meatballs are formed.
step three:
Add to the oven and bake for around 30 to 40 minutes. The tops of the meatballs will start to turn dark brown. Use a food thermometer to ensure the enteral temperature is at least 165 degrees.
step four:
Remove from oven. Serve with tzatziki sauce or hummus. Enjoy!

- 1 tbsp Dried Chives

- 1 tsp Salt
- 2 tsp Pepper

soft meatballs?
