Ham Wrapped Asparagus with Hollandaise Sauce

This ham wrapped asparagus with hollandaise sauce is the perfect item for Spring. I plan on making this for my Easter lunch. I love asparagus with hollandaise sauce, but this recipe puts a different twist on typical asparagus bundles. This are really light and fresh, and bring that perfect eggy vegetable side dish to your table.
I love spring recipes. Things that are light and fresh. This is perfect for Easter or spring. I love asparagus bundles. You can wrap them in bacon or ham or prosciutto. However, they are all delicious. These ham wrapped asparagus bundles are great for brunch too!
Equipment You’ll Need
For this recipe, you’ll need some baking pans for cook your bundles on. I linked the ones I have. Then for the hollandaise sauce, you’ll need a food processor and a small sauce pot.
Ingredients You’ll Need
Fresh Asparagus:
You will need two bunches of fresh asparagus. I always cut off the bottom ends before cooking.
Thinly Sliced Honey Ham:
You’ll need some thinly sliced honey ham to wrap around your asparagus.
3 Eggs Yolks:
For your hollandaise sauce, you’ll need 3 egg yolks.
Lemon:
You have to use a fresh lemon. I used a lemon juice substitute, and it will not work! It curdles every time…
Unsalted Butter:
I used a stick of unsalted butter.
Seasonings:
You’ll need ground mustard, salt, pepper, garlic powder and Cajun seasonings.
How to Make Ham Wrapped Asparagus with Hollandaise Sauce
Step One:
Preheat your oven to 350 degrees. Cut the bottom inch off of all of your asparagus stalks. Take about 4 at a time and wrap them with thin slices of ham. S
Step two:
Lay them on your baking sheet lined with parchment paper and sprinkle with salt pepper and garlic powder. Bake your asparagus bundles for about 15 to 20 minutes.

While your asparagus is baking, add 3 egg yolks, the juice of half a lemon, and a tablespoon of ground mustard to a food processor or blender. While it’s blending, add your stick of butter to a small pot on low heat on the stove.
Step five:
Once butter is melted, turn off heat then add in your egg yolk mixture. Slowly stir, and it will thicken up. Add in Cajun seasonings and serve warm over your asparagus bundles. I like to garnish with chopped boiled eggs. Enjoy!
