Homemade Copycat Hamburger Helper Potato Stroganoff

This homemade hamburger helper potato stroganoff is the perfect hearty dinner. I mean, this is just a classic dinner recipe. You’re going to brown some ground beef and layer it with cheese, cream of mushroom and thinly sliced potatoes. Cover and bake it for about an hour and you have it. This dinner is classic and it’s super easy to make.
Like I said before, this is just a homemade hamburger helper potato stroganoff. Might I also mention that this dinner is super cheap, too. You can buy an inexpensive package of chuck ground beef, three or four potatoes, an onion, beef broth and some cream of mushroom. That’s really all you’re going to need.

Do the potatoes get done?
Yes! They will cook covered in the broth and cream of mushroom and will be tender once your cooking time is over!
What fat percentage ground beef?
You can use any percentage, just be sure and drain the grease off.
Can you make this ahead?
Yes. You can assemble the casserole and store it in the refrigerator for up to three days. You can also freeze this casserole. Again, assemble it and store it in the freezer for three to six months. Remove and let it thaw in the refrigerator then bake according to the instructions.
Equipment You’ll Need
For this homemade hamburger helper recipe, you can use a mandolin, but I don’t have one, so I just tried to carefully slice my potatoes as thin as possible. I did use a vegetable peeler beforehand. Other than that, all you’re pretty much going to need is a large skillet and spatula.
Ingredients You’ll Need
Ground Beef:
You’ll need two pounds of ground beef. You can use whatever fat percentage you’d like. You’ll be draining off the fat anyway.
Russet Potatoes:
You’ll need three to four large russet potatoes, peeled and sliced thinly.
Yellow Onion:
You’ll need one yellow onion, chopped.
Cream of Mushroom Soup:
You’ll need a can of cream of mushroom soup. This will be for the creamy base sauce.
Heavy Cream:
Heavy cream because why not…?
Beef Broth:
I used a cup and a half of beef broth. This will give your sauce flavor that will cook into the potatoes.
Shredded Cheddar Cheese:
I think in all I used about 4 cups of shredded cheddar cheese.
Seasonings:
As for the seasonings, you’ll need salt, pepper, onion and garlic powder and sugar.
How to Make This Hamburger Helper Potato Stroganoff
- Preheat your oven to 350 degrees. In a large skillet, brown ground beef and chopped onion. Once it’s fully cooked, drain off the fat and then mix in all of the listed seasonings.
- Carefully using a sharp kitchen knife or a mandolin, peel and slice potatoes into thin slices. In another separate bowl, mix together cream of mushroom soup, beef broth and heavy cream.
- In the skillet, layer some potatoes then beef then cheese and keep repeating until the skillet is full. Slowly pour over the cream of mushroom mixture over the top and let it seep through the layers. Cover with foil and bake for around an hour.
- Remove foil, top with more cheese, and broil for 5-7 minutes. Serve hot and enjoy!
