Loaded Mashed Potato Casserole
This loaded mashed potato casserole is the perfect all-American starchy side dish. I mean, who doesn’t love dinners with mashed potatoes? This is a mix up of a loaded baked potato added into some homemade mashed potatoes loaded and baked with sour cream and cheeses. This is so decadent and rich and will serve as a perfect side dish for literally almost anything! Read along to see how I made this easy, side recipe!
Equipment You Will Need…
This easy potato casserole requires little to no equipment. I used my Staub 9 x 13 casserole dish. I also used a potato and vegetable peeler to make my homemade mashed potatoes. I’ve linked my exact dish below in several options. I love that one so much and I use it for almost all of my casseroles.

So this recipe is very simple. I actually made homemade mashed potatoes. However, this would be a perfect leftover mashed potato casserole. You could also use instant mashed potatoes! Don’t make it hard!
Shopping List:
- 4-5 Large Potatoes
- 3 tbsp Sour Cream
- 1 cup Heavy Cream
- 3 cups Shredded Cheese I used a mixed blend
- 3-4 Green Onions, Chopped
- 1/2 cup Bacon Bits
- 2 tbsp Melted Butter
- 1 tsp Salt
- 2 tsp Pepper
- 1 tbsp Garlic Powder
Step By Step How to Make This Casserole
Step 1
Preheat your oven to 350 degrees. Peel and cube your potatoes. Wash them off very good for several minutes in a colander. Place them in a large pot and boil for about 15 minutes or until tender.
Step 2
Place the tender potatoes in a large bowl. Mash with the end of a whisk or a potato masher. Add in the sour cream, heavy cream, 1/2 cup of shredded cheese, bacon bits, green onions, melted butter and spices. Mix well. For best results, use an electric hand mixer.
Step 3
Pour the mixture into your casserole dish. Top with the remaining 2 and 1/2 cups of shredded cheese. Bake at 350 degrees for around 25-30 minutes or until cheese is melted and bubbly. Serve hot and enjoy!
