Loaded Queso Mac and Cheese

Loaded queso mac and cheese. It’s a traditional queso recipe packed with Velveeta cheese, ground sausage, and Rotel tomatoes with some pasta folded in. Ok. I know it looks like hamburger helper but it’s way more than that!! If you love queso dip, you’ll love it with mac and cheese folded into it, I promise.
This recipe is exactly what it sounds like. It’s queso and it’s mac and cheese. Queso with pasta folded in. A Mexican mac and cheese. This is pretty much my loaded queso recipe just with some cellentani pasta. It’s so good and a mix on classic side.
Equipment You’ll Need
For this recipe, I used a large pot. I boiled my pasta in it, I sauteed my meat in it, and made my queso in it. I love my 5 and half quart Le Creuset pot. I know they are expensive, but I’ve had it for years and it’s so worth it. You’ll also need a spoon or spatula and maybe a colander.
Ingredients You’ll Need
Cellentani Pasta:
I used 16 ounces of cellentani pasta. I like this kind, but you can use whatever pasta you’d like.
Ground Pork Sausage:
I used 16 ounces of pork sausage. I used the regular, but if you want, you can use the spicy.
Velveeta Block Cheese:
I used 16 ounces of regular Velveeta block cheese.
Evaporated Milk:
You’ll need one can of evaporated milk. This is imperative for the creaminess.
Rotel Tomatoes with Green Chiles:
You’ll need one can of Rotel. Be sure to drain it before you add it in.
Cajun Seasoning:
I use Cajun seasonings on everything. I just sprinkled some of top to add some flavor.
How to Make This Loaded Queso Mac and Cheese
Step one:
Boil pasta according to instructions. Drain and set aside. Ground sausage, drain off grease, and set aside on a plate as well.
Step two:
In a large pot, add in Velveeta cheese, evaporated milk, and drained Rotel tomatoes. Simmer on low until fully melted. Add in sausage and stir.
Step three:
Fold in your pasta. I like to garnish with a little Cajun seasoning on top. Serve and enjoy!
