Mixed Berry American Flag Pie

This mixed berry American flag pie is perfect for your holiday function. It’s fun, festive and delicious. I love desserts like this. They are fun to make. Don’t worry about it looking perfect, it’s all in the fun of the process. This pie tastes delicious, and everyone will love looking at it too.
I feel like folks are always looking for 4th of July pie recipes or something festive to make for a cookout. This one is just fun to make and equally as delicious. I used two storebought crusts, layered the first one with the filling on top of that, then topped it with my second. I used a tiny star cutter and a knife to make the stripes.
Don’t worry about it looking perfect! I feel like it looks great with the rustic look! Just have fun with it!
Equipment You’ll Need
For this American flag pie, you’ll definitely need some a tiny star cutter. Mine is a one-inch cutter. I have a set of these little things to try to get my daughter to eat. They are really cute and inexpensive, and you can typically find them at Walmart.
You’ll also need a pie dish and some mixing bowls. I used my favorite one I’ve linked below. I love all Staub ceramics. I think I actually have a few of these.
Ingredients You’ll Need
Pie Crust Dough Sheets:
I like using shortcuts. If you have a pie dough recipe, great! I just used two storebought ones.
Blueberries:
I used about a cup of blueberries.
Strawberries:
You’ll want to slice some strawberries and you’ll used about 2-3 cups of sliced strawberries.
Lemon Juice:
Sugars:
I used a mix of granulated sugar and brown sugar for the filling. I then topped the pie with some turbinado sugar.
Cornstarch:
You’ll need about a third of a cup of cornstarch. This will help the filling to thicken up a little.
Vanilla Extract:
This is just for flavor.
Egg:
You’ll need one egg to brush over the top crust.
How to Make This Mixed Berry American Flag Pie
Step one:
Preheat your oven to 400 degrees. Let both sheets of pie crust dough thaw, if necessary. Grease your pie dish then lay the first over the top. Trim excess around the edges.
Step two:
In a large mixing bowl, combine the sugars and cornstarch. Add your strawberries and blueberries to two separate bowls. Add a teaspoon of vanilla and a tablespoon of lemon juice to each bowl of fruit and stir.
Step three:
Take about a third of a cup of the cornstarch sugar mixture and place in the bowl with the blueberries and mix well. Add the rest to the bowl with the strawberries and mix well.
Step four:
Add the blueberry mix to the top left corner of the pie dish. Add the strawberry mix to the remaining 3/4 of the pie dish. Take your star cutter and cut several stars in the other pie crust dough in the top left and then make stripes with a kitchen knife in the rest. It does not have to be perfect and if you mess up, its ok! Just roll the dough out again and start over!
Step five:
Gently lay that piece on top then trim and mash the edges with a fork. Beat your eggs and brush over the top and sprinkle with turbinado sugar. Place on a baking sheet then bake at 400 for ten minutes. After 10 minutes, reduce to 375 then cover gently with foil. Cook for a remaining 30 to 45 minutes until the filling looks bubbly. The foil will help the crust not to overcook. Remove and let cool. Serve and enjoy!
