It’s soup season, and it does get much cozier than this old fashioned vegetable soup with ground beef. This is the simplest recipe. You’ll need ground beef, some canned vegetables, beef broth and seasonings. Dump it all in and let it simmer. This is a hearty meal for cold winter months, or anytime of the year.
This is an ultimate comfort food to me. Plus, it’s so simple. I love making this on one cold, winter nights. It’s super easy to throw together after a long day. You can’t beat it. There are so many ways to make a old fashioned vegetable soup with ground beef, but this one has to be the simplest.
Questions You Might Have…
Fat consistency for the ground beef:
The leaner, the better. I mention in the recipe that it’s recommended to wash off the ground beef before adding it back to the pot. This will prohibit any fat from pooling at the top of your soup.
Can I use frozen mixed vegetables instead?
You can. However, I find most frozen vegetables don’t include potatoes. I like the Veg-All because it has all the things.
Can I use freeze this soup?
Absolutely. My granny used to always freeze this soup. Store it in freezer gallon-sized bags for up to 3 to 6 months. Just simply thaw it out and heat it back up in a pot.
What to serve with this vegetable soup?
Ok. You have to serve it with my Southern cornbread recipe. It’s perfect!
Equipment You’ll Need:
For this recipe, you’ll need a large Dutch oven or pot. I like to use my 5.5 qt Le Creuset. You’ll also need a colander, can opener, knife to cut your onion and a spoon or spatula for stirring.
Ingredients You’ll Need:
Ground Beef
You’ll need to use two pounds of ground beef. The leaner the meat the better.
Onion
You’ll need to chop one yellow onion.
Mixed Vegetables
For mixed vegetables, I used Veg-All. It has all the vegetables you’ll need.
Petite Diced Tomatoes
You’ll need a large can of petite diced tomatoes with Italian seasonings.
Tomato Soup
You’ll need one can of tomato soup.
Beef Broth
I filled the tomato soup can with beef broth and added it to the soup. It’s about a cup and a half.
Italian Dressing Mix
You’ll need one Italian dressing mix packet. I believe they are .7 of an ounce each.
Seasonings
As for seasonings, you’ll need salt, pepper, Italian seasonings, garlic powder, onion powder, and sugar.
How to Make This Old Fashioned Vegetable Soup with Ground Beef
- Add ground beef to a large pot. Brown the meat until fully cooked then drain off the excess grease. I like to wash my ground beef in a colander with water to remove as much grease as possible.
- Return ground beef to pot and add chopped onion. Heat over medium heat until onion starts to cook. Add all other ingredients and bring to a boil. Once boiling, reduce heat to low and cover. Let it simmer for about 10 minutes. Serve and enjoy!

- 2 lbs Ground Beef
- 1 Yellow Onion, chopped
- 3 15 oz cans Veg-All or Mixed Vegetables
- 1 30 oz can Petite Diced Tomatoes with Italian Seasoning
- 1 15 oz can Tomato Soup
- 10 oz Beef Broth (I filled up the tomato soup can for size)
- 1 packet Italian Dressing Mix
- 1 tsp Salt
- 1 tbsp Sugar
- 1 tsp Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1 tbsp Italian Seasonings
Instructions
