Think of this as the most delicious and simplified version of a holiday classic. These Cornish Hens are Thanksgiving-ready with just a few ingredients like sage, butter, garlic and salt and pepper. And they’re so simple to make: just season, roast and shred!
For the Brown Butter:
- 2 Sticks of Butter
- 6-8 Fresh Sage Leaves
For the Hens:
- 2 Cornish Hens
- 1 Yellow Onion
- Salt
- Pepper
- Garlic Powder
- Onion Powder
Step by Step How to Make These Roasted Sage Brown Butter Cornish Hens
Step 1
Preheat your oven to 450 degrees. The first step is the brown butter. Take your pot and add two sticks of butter. Sauté them on low heat. When the butter is completely melted, add in your sage leaves. Keep stirring your butter. It will start to foam on the top. This should take anywhere from 5-10 minutes. Your butter will start to turn a nice golden-brown color and your sage leaves will be fried. Remove your butter from heat.
Step 2
Season your hens with some all-purpose seasonings: salt, pepper, onion and garlic powders. Add them to your pot with the breast side up. Baste the tops with some of the brown butter. Add in your sliced onion, then place the pot into the oven. Bake at 450 for 20 minutes then reduce heat to 350 degrees. Let your hens roast at 350 for an additional 30 minutes. The thickest part of the hens should reach an internal temperature of 165 degrees. Remove from oven. The top of the hens will have nice crispy skin and the bottoms will have the savory flavor from the brown butter. Wild rice or sweet potatoes pair perfectly with these hens. Enjoy!
