Simple Breakfast Skillet

I love this simple breakfast skillet. It’s a one-pot, perfect meal for any time of the day. You’ll sauté some sausage, onions, bell peppers and potatoes until tender. Top it off with some eggs, let them cook, then serve! It’s so simple and takes less than 30 minutes to make!
Who doesn’t love a breakfast skillet recipe? There’s honestly nothing more American than this. I guess it’s kinda like a cowboy breakfast skillet. It’s seriously so simple and easy. One pot…veggies, protein. It has it all. Can’t beat it.
Equipment You’ll Need
One thing that I love about this recipe is that it doesn’t require hardly any equipment to make it with. You’ll need a larger skillet, a wooden spoon or spatula, and then a knife to chop your vegetables with. Don’t forget; you’ll also need something to cover your skillet with if it doesn’t have a lid, like maybe some tin foil.
Ingredients You’ll Need
Ground Breakfast Sausage:
You’ll need a pound of ground breakfast sausage. Like the ones that come in the plastic casing. I used regular, but you could also use spicy! Whatever your preference.
Onion & Bell Pepper:
You’ll chop a yellow onion and green bell pepper and add to the skillet.
Mini Gold Potatoes:
I used a one and a half pound bag of mini gold potatoes. These usually come in a mesh bag. If you can’t find them, just chop up a pound and a half of Yukon gold potatoes.
Rotel Tomatoes:
You’ll need a can of Rotel tomatoes with green chiles. Be sure to drain first.
Seasonings:
You’ll use salt, pepper, onion powder, and garlic powder.
Eggs:
I used 7 large eggs, but you can use however many can fit in your skillet.
How to Make a Breakfast Skillet
Step one:
Add your ground sausage to a large skillet. Sauté on medium to high heat until meat is fully browned.
Step two:
Chop onion and bell pepper and add them to the skillet. Dice potatoes and add them. Drain and add in can of Rotel tomatoes. Finish off with all the seasonings, stir, and cover.
Step three:
Let skillet simmer on medium to low heat for about 6-8 minutes. Potatoes should start to get tender.
Step four:
Make about 7-8 holes in the hash. Crack an egg in each hole then cover again. Let cook for 2-3 minutes until eggs are cooked. Serve and enjoy!

- 1 Green Bell Pepper, Chopped
- 1- 1 1/2 lbs Mini Gold Potatoes, Diced
- 1 can Rotel Tomatoes with Green Chiles
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 7-8 Large Eggs
Instructions
