These butter, chive and garlic smashed red potatoes are a great side dish for any occasion. You can make as many or a little of these as you want. This is no set amount or recipe. You just boil the number of potatoes you’d want, smash them, put a slice of butter on each one, seasoning them up real good and bake. That’s it! These come out so decadently buttery and amazing.

Equipment You’ll Need
You’ll need something to boil the potatoes in first. A large pot will work. Then, you’ll need a baking dish with parchment paper. I use these sheets of parchment paper for everything. They make clean up so easy. Lastly, you’ll need something to “mash” your red potatoes with. I used a mason jar.

Ingredients You’ll Need
Mini Red Potatoes:
I used about a pound of mini red potatoes. This recipe can go however far or short you want it to. No exact measurements.
Butter:
You’ll need maybe a stick of butter. You’ll put a slice on top of each smashed potato.
Chives:
I topped these with chives. I just loved the flavor with the butter.
Seasonings:
I used salt, pepper, and garlic powder. No particular amount. Just seasoned them a bit with each.

How to Make Smashed Red Potatoes with Butter and Chives
Step One:
Preheat your oven to 425 degrees. Boil your mini red potatoes until they are still fairly firm but can be easily stuck with a fork.
Step two:
Place them on a large lined baked pan. Take a glass or a jar and mash them until they are “smashed.”
Step three:
Sprinkle them with salt, pepper and onions powder then place a slice of butter on each potato. Top with chives.
Step four:
Bake at 425 for about 15 minutes until nice and crispy. Serve and enjoy!
