I love a one-pot dinner, but I really love this one pot chicken pot pie pasta. It just has all the parts. Meat, pasta, veggies. This sauce…it’s just so good. I don’t know what it is about canned cream of chicken soup, but I just don’t like it. It’s twangy. Is that just me?

Ok. Well, in this recipe and most of my others, I like to make my own. I just use butter, flour, chicken broth, chicken bouillon and heavy cream. Amazingly good, and worth the extra step!

Equipment You’ll Need

For starters, you’ll need a large pot to boil your pasta in. After that, a large skillet, spoon or spatula, and knife for chopping your celery and onion is about all you’ll need. This recipe is easy to clean up after.

Ingredients You’ll Need

Rotisserie Chicken:

You’ll need one whole rotisserie chicken.

Pasta:

You’ll need about two to three cups of cooked pasta.

Celery & Yellow Onion:

I love a little celery and onion in most dishes. I used one stick of celery and a small yellow onion, chopped into bits.

Butter & Flour:

This is the base of your sauce. You’ll mix them both in with the celery and onions. It reminds me of a roux making gumbo. The veggies look fluffy once you mix them all together.

Chicken Broth:

I used about a cup and a half of chicken broth. You’ll stir that in with your butter, flour, veggie paste. Sauté until it becomes thick.

Heavy Cream:

This is for the creaminess. If you want it creamier, you can always add more.

Frozen Mixed Vegetables:

I used a 10-ounce bag of frozen mixed vegetables. This is like the little steamable bags.

Seasonings:

For seasonings, you’ll need sugar, pepper, and chicken bouillon. I did not use salt. I felt like the chicken, chicken broth and bouillon add enough salty flavor, so I didn’t add any. If you think it needs some…add it in.

How to Make Chicken Pot Pie Pasta

step one:

Boil and drain pasta and set aside. You’ll need about 2 to 3 cups of the cooked pasta. Remove chicken from bone and set the meat aside, as well.

step two:

In a large skillet, add your chopped onion and celery to medium to low heat. Sauté for several minutes and add in your butter. When butter melts, sift in the flour and stir. The vegetables will become coated in a thick paste.

step three:

Add in your chicken broth and stir constantly for several minutes. The broth will start to become thick. Then, stir in your seasonings and heavy cream. While still on low heat, fold in your chicken, pasta, and mixed frozen vegetables. Stir until vegetables seem cooked. Serve and enjoy!

  • 1 tbsp Sugar

Notes

no salt?
I felt like the chicken, chicken broth and bouillon add enough salty flavor, so I didn’t add any. If you think it needs some, by all means, add it in!

  1. Easy weeknight recipe. Highly recommend reducing the amount of pepper. I did add salt to taste. Great flavor! Will be saving the recipe!
