I love a summer salad. I actually love all summer veggies. This grilled summer salad is perfect for this time of year. I made it the other night and took across the street to my neighbor’s house. They have a beautiful pool, and Amelia had been swimming all afternoon. We had beef tenderloin some potatoes and this salad. It was the perfect meal to end the summer day!

Equipment You’ll Need

For this recipe, you’ll need some sort of a grill. You can use an outdoor BBQ grill, or you could also use a griddle to place over a burner on your stove. The process is the same with either one. You’ll also need some tongs to flip the veggies with while grilling. You’ll also need a large bowl and some to mix up your dressing in.

Ingredients You’ll Need

Spring Mix:

You’ll need about three cups of a spring salad mix. I feel like this is better with this salad than iceberg or Romaine.

Vegetables:

You can use whatever vegetables you want to grill. I used cherry tomatoes, zucchini, yellow squash, corn on the cob and a red onion.

Butter:

You’ll need a few tablespoons of butter to baste your vegetables with while grilling.

Parmesan Cheese:

I put some shredded parmesan cheese on my salad. You could use whatever cheese your prefer, but I liked the parmesan.

Sweet Onion Vinaigrette:

This sweet onion vinaigrette is essential. You’ll need equal parts olive oil and apple cider vinegar. Then, for seasonings, you’ll need salt, pepper, sugar and plenty of onion powder.

How to Make This Grilled Vegetable Salad with Sweet Onion Vinaigrette

Step one:

Heat your grill to high heat. Melt butter and baste all sides of your vegetables with the butter. I cut my squash and onions in half down the middle. Add veggies to grill. Grill on each side for several minutes or until preferred doneness. You should have some nice char marks on all sides.

Step two:

Remove vegetables from oven and slice into cubes. Cut the corn from the cob. Add all vegetables to a large bowl over your greens. Mix all ingredients for vinaigrette together in a jar or bowl. Dress the salad with the vinaigrette and cheese. Serve and enjoy!

  • Mason Jar or Small Bowl
  • Kitchen Knife

Ingredients
  

  • 3 cups Spring Mix
