Slow Cooker BBQ Brisket Sandwich

A BBQ brisket sandwich. Something that I love. Guilty pleasure. Comfort food. This one is so simple to make. I whipped up a simple homemade BBQ sauce and threw it in a crock pot with a small brisket. Let it slow cook for about 5 to 6 hours. I made the sandwich with a simple coleslaw, pickles and a brioche bun. You cannot beat this amazing sandwich, I’m telling you. Plus, it’s so easy!
These sandwiches are so delicious. I made them with a homemade BBQ sauce and a simple coleslaw. You can always use storebought or another recipe. However, for this brisket sandwich, this combo went perfectly together. These fixings are perfect too. The hamburger dill slices. You can’t skip out on them! Something about the vinegary flavors that pair so well with the BBQ and the creamy coleslaw.
Equipment You’ll Need
You’ll need a large crockpot. Mine is a 7-quart. Then you’ll need a small bowl or mason jar to mix the BBQ sauce in, and large bowl for the coleslaw.
Ingredients You’ll Need
Brisket:
I used about a 5 pound brisket. I love these tiny little briskets. They fit perfect in a crock pot and are perfect for meals for a family not a crowd.
BBQ Sauce:
I made my own, but you can use storebought if you don’t have time or don’t want to make your own. I used ketchup, mustard, Dijon mustard, apple cider vinegar, salt, pepper, garlic powder, brown sugar, soy sauce, and Worcestershire sauce.
Brioche Buns:
You need the brioche buns for this bbq brisket sandwich. They are so sweet and perfect for this recipe.
Coleslaw:
I made my own coleslaw as well. I used cabbage mix, mayo, sour cream, apple cider vinegar, pickle juice, pepper, and Cajun seasonings.
Pickles:
Pickles are just one of the fixings you need to build your brisket sandwich.
Cheddar Slices:
You’ll need some sliced sharp cheddar. I used the higher quality kind from the deli section of the grocery.
How to Make a Slow Cooker BBQ Brisket Sandwich
Step One:
Mix all the ingredients for you BBQ sauce together in a small bowl or mason jar. Add your brisket to a large crockpot, fat side up. Pour all of your BBQ sauce over the top.
Step two:
Cook on high for at least 5 hours. Once it’s finished, shred with forks. Before I shredded the meat, I removed some of the juice so it wouldn’t be so soupy in the crockpot.
Step three:
Mix all the ingredients together for your coleslaw together. Toast your buns. Assemble the sandwiches with cheese, brisket, coleslaw and pickles. Serve and enjoy!

Ingredients
- 8-10 Brioche Buns
- 5+/- lb Brisket
- Sharp Cheddar Cheese Slices
- Hamburger Dill Pickle Slices
BBQ Sauce
- 1 cup Ketchup
- 1 tbsp Yellow Mustard
- 1 tbsp Dijon Mustard
- 1/2 cup Apple Cider Vinegar
- 1 tbsp Worcestershire Sauce
- 1 tbsp Soy Sauce
- 1/4 cup Brown Sugar
- 1 tbsp Garlic Powder
- 1 tsp Salt
- 2 tsp Black Pepper
Coleslaw
- 16 oz Coleslaw Mix
- 3 tbsp Mayonnaise
- 1 tbsp Sour Cream
- 1/4 cup Pickle Juice
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Black Pepper
- 1 tbsp Cajun Seasonings
Instructions
