Slow Cooker Short Ribs Vegetable Beef Soup

This slow cooker short ribs vegetable beef soup is just a new twist on a traditional comfort food. All you’re going to do is slow cook all of your typical ingredients for a vegetable beef soup, but instead of beef tips, you’ll use short ribs. I love short ribs in crock pots. They come out so tender and the flavor is 100% better. This is a perfect and easy crockpot meal that’s full of flavor.
I usually am always cooking something in the crockpot on Wednesday nights. It’s just a long day in our house. We have dance after school, and then church immediately after. I usually don’t get home until after 7 pm. I love something that’s totally ready by the time I get home. This crockpot short ribs vegetable soup was perfect. It was quick to throw together that morning, and required hardly any clean up time after.
Plus, it’s just really good. My granny always made vegetable beef soup, so this reminded me of her. I’ve been on this short ribs kick lately. I really like the way they cook down and the flavor is amazing. They are so rich and tender after cooking all day, and just have more of a dense flavor than traditional beef tips.
Equipment You’ll Need
I love a recipe that requires hardly any equipment. Literally, all you’ll need is a large crockpot and a can opener. That’s seriously about it.
Ingredients You’ll Need
Beef Short Ribs:
You’ll need about 4 pounds of beef short ribs. I know this may sound like a lot, but once you remove the bones, it’s not that much.
Canned Vegetables:
You’ll use 2 cans of whole new potatoes and one can each of whole kernel corn, cut green beans, and stewed Italian tomatoes.
Fresh Vegetables:
You’ll need about two cups each of baby carrots and whole brown mushrooms.
Red Wine:
I used about a cup of red wine. I love the flavor it gives to the soup.
Seasonings:
For seasonings, all I used was thyme, salt and pepper.
Beef Broth:
You’ll need 32 ounces of beef broth.
How to Make This Slow Cooker Short Ribs Vegetable Beef Soup
Step One:
Add all of the ingredients to a large crockpot. Cook on high for 6-8 hours.
Step two:
After time is up, remove bones from short ribs and shred meat with two forks. Serve with crackers or cornbread. Enjoy!
