Crock Pot Southern Lima Beans

I love these crock pot Southern lima beans. Whether you call them lima beans or butter beans, whatever they are, they are so simple and packed full of flavor. Delicious and buttery with the savory flavor of ham packed into every bite. I like eating beans over rice with cornbread as a main meal, but you can always serve them as a side dish. Keep reading to see how I made these lima beans in the crockpot.
If you’ve noticed, my crew loves a good bean recipe. We like to eat beans as a main dish. Serve them over rice with some cornbread. So yum. This lima beans recipe is perfect for just that. I placed this lima beans or butter beans in the crockpot. I didn’t soak them before since we’re slow cooking them. Put them in the crockpot with some ham, butter, broth and seasonings. So good and so simple. They take about 5 minutes of preparation which is perfect for a busy weekday.
Equipment You’ll Need
All you’ll need for this recipe is a large crockpot. I believe that mine are all 7-quart. I’ve linked the ones I have below. I love the red one. It’s festive and easy to use.
Ingredients You’ll Need
Dry, Big Lima Beans:
Ok, lima beans vs butter beans. Same thing. You’ll need two dry pounds of them. Don’t worry about soaking them. You’ll be slow cooking them, so that’ll do the trick.
Ham:
I used a large hambone left over for the holidays for this particular time, but you’ll need about 2 pounds worth of ham bone, or ham hocks. You can also use just thick cut spiral ham.
Broth:
You’ll need about 4 to 6 cups of chicken broth.
Water:
You’ll need about 4 cups of water. The beans will soak up a lot of the water.
Butter and Seasonings:
You can add the butter and seasonings to taste if you want, but I put what I think I put in there. I’m so bad about just throwing seasonings in the pot.
How to Cook Dry Lima Beans?
Step One:
Empty all ingredients into a large crockpot. It may seem like a lot of broth and water, but your beans will need and soak up a lot of liquid. Cook on high for at least 5 hours.
Step two:
Once time is up, stir and add more broth or water if needed. Remove any ham bones or gristle. Serve as a side dish or over rice with some cornbread as a main. Enjoy!

Ingredients
- 2 lbs Dried Big Lima Beans
- 1-2 lbs Ham (You can use a leftover hambone or ham hocks or even thick cut spiral ham)
- 4-6 cups Chicken Broth
- 4 cups Water
- 4 tbsp Butter
- 1-2 tsp Salt
- 1 tbsp Pepper
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tsp Paprka
- 1 tbsp Sugar
Instructions
- Empty all ingredients into a large crockpot. It may seem like a lot of broth and water but your beans will need and soak up a lot of liquid. Cook on high for at least 5 hours.

Notes
What if beans are still hard?
Add more water or broth. Stir and cover for about 30 more minutes. It should only maybe be the beans on the top of the crockpot. Make sure those are on the bottom of the crockpot after stirring.Hold on…
