Easy Baked Chicken Caprese
This easy baked chicken caprese is the simplest throw-together, one-pot dinner. I love a classic caprese salad, so this chicken caprese bake is the perfect twist for an entire meal. You’ll simple start to brown the chicken along in the skillet, add in the tomatoes then bake. Once chicken is fully cooked and tomatoes soft, you’ll add your mozzarella and voila! You have the perfect baked chicken caprese recipe.

This recipe is really easy. You’ll basically seasoning and brown your chicken, add the tomatoes, bake, add the cheese and that’s it. It’s about as much of a one-pot dish as it comes.

One reason why I love the one-pot recipes is that there’s not a lot to clean up afterwards. Other than your Dutch oven or pot, all you’ll need for this recipe is a knife and cutting board and some tongs.

Equipment You’ll Need
For starters, I used a cutting board and a sharp kitchen knife. I then added them to my large Le Creuset Dutch oven. I believe mine is the 7 quart. However, you can use whatever you have. I browned my chicken flipping them a few times with metal tongs. And that’s about all the equipment you’ll need.

Chicken Breasts:
I used three pounds of chicken breast meat. I sliced them into smaller strips. but you could technically bake them like this whole.
Seasonings:
I used salt, pepper, garlic powder, onion powder, and Italian seasonings.
Cherry Tomatoes:
I used a 10-ounce container of cherry tomatoes. Once they are in the oven and start to cook down, you’ll hear them “pop” or steam when they burst.
Mozzarella Pearls:
I used an eight-ounce package of mozzarella pearls. These were so good and I baked them until they became perfect and melted on top.
Fresh Basil:
Once the dish was finished, I topped it with fresh basil. This adds the perfect caprese flavor, and perfectly finishes off the dish.
Step by Step How to Make This Easy Baked Chicken Caprese
Step one
Preheat your oven to 375 degrees. Slice your chicken breasts into smaller strips, dividing them into halves or thirds. Season them on both sides with salt, pepper, onion and garlic powders and Italian seasonings.
Step two
Add a large Dutch-oven to your stove. Turn the heat on to medium to high and add in two tablespoons of olive oil. Add in your chicken strips, getting a good brown and sear to both sides. Add in your cherry tomatoes then add your pot to the oven.
Step three
Bake your chicken and tomatoes with the lid on for around 25 minutes or until your chicken reaches an internal temperature of at least 170 degrees. Add in your mozzarella pearls to your pot then cook with the lid removed for an additional 10 minutes or until cheese is melted. Serve with fresh basil on top. Enjoy!
