Loaded Queso Dip
This easy crockpot loaded queso dip is so easy and delicious for a crowd. It’s also super easy. I like to call these a “dump” recipe. It’s just the Velveeta, browned sausage, a can of Rotel, and diced tomato, green bell pepper, and a purple onion. Dump those in with a can of evaporated milk for the most creamy, and loaded dip. This recipe is perfect for tailgating or any party! Read along to see how I threw this recipe together…
I love this queso recipe. It’s literally so simple. I put it on early in the morning this past Sunday for a day long of NFL playoff watching. If you’ve read my posts before, you’ll know I always have people in and out of my house. I browned my sausage and threw it and the rest of the ingredients in the crockpot on low. It made a perfect snack for everyone throughout the day. It was so so good, and perfect for the occasion.
Equipment You’ll Need…
It’s fairly simple to piece together. I used my 8 quart crockpot and a skillet to brown my sausage. I have some of these little queso bowls that they usually serve at Mexican restaurants that I love too.
Ingredients You’ll Need…
So, when I make a dish, I try to make it several times and I like to ask everyone if they would change anything. I’ve tried this queso several times and I still would not change one single thing. It is the perfect creaminess from the evaporated milk with the right amount of heat from the sausage and Rotel tomatoes. If you are a super spicy person, add in some diced jalapenos. However, I think it’s perfect just like this…

Notes
- This recipe can also be made immediately in a large pot. Add all ingredients into the pot the same way, and heat on low until fully melted.
- Add in diced jalapenos for added heat.
- You can also easily substitute the sausage for ground beef. I would season the beef with taco seasoning for more flavor before adding in.

This is the best queso dip i have EVER made. Wow. What a recipe!! Here I was thinking just velveta, Rotel and sausage was superior. The evaporated milk and fresh veggies – game changer! This will be a go to and staple for YEARS! Thank you!
