Homemade Rice a Roni Chicken Broccoli Cheese Casserole

This homemade rice a roni chicken broccoli cheese casserole is an amazing one pot dinner. It’s sautéed chicken and broccoli cooked with rice, broken spaghetti noodles in a creamy cheese sauce. If you love all things broccoli cheddar, this is an easy dinner meal for you.
I love this dinner. Seriously. This is a mix in on an old broccoli cheese casserole. Why not take something and make a meal out of it? I also love that it’s a homemade rice a roni. Something about the rice and the noodles go so well together.
Equipment You’ll Need
You’ll need a large skillet with a lid. You’ll have to have a lid so that your rice and noodles can cook. You’ll also need another small pot to make your cheese sauce in. A few miscellaneous items I used were some tongs and measuring cups.
Ingredients You’ll Need
Chicken Breasts:
You’ll start with some chicken breasts. I used 3 large breasts and cut them into smaller strips.
Olive Oil:
You’ll need a drizzle of olive oil for your skillet.
Broccoli:
You’ll need a 12 ounce bag of steamable broccoli. You’ll need to microwave your broccoli before using.
Rice:
I used a cup of white rice.
Spaghetti:
I used about a cup of spaghetti noodles broken down. It’ll make about a cup.
Evaporated Milk:
You’ll need a can of evaporated milk.
Velveeta Cheese:
You’ll need 16 ounces of Velveeta block cheese.
Seasonings:
As for seasonings, I used salt, pepper, garlic and onion powder and a little Cajun seasoning to put on your chicken.
How to Make This Homemade Rice a Roni Chicken Broccoli Cheese Casserole Recipe
step one:
Cut your chicken breasts into strips of smaller pieces. Season them with the listed seasonings. Heat skillet to high heat, drizzle with olive oil then add chicken to the skillet. Sear on both sides then cover with lid. Sauté on medium to low heat for about 10 minutes.
step two:
Chicken should be cooked by this time. Steam broccoli in the microwave then add to the skillet. Add spaghetti noodles to a large bowl then cover with a rag. Press down and crack spaghetti noodles into smaller bit. This is the most effective way to do so. Then, add them, plus rice and 3 cups of chicken broth to the skillet. Cover and simmer on low heat.
step three:
In another small pot, mix evaporated milk and Velveeta. Stir until a sauce is formed. After you make your sauce, add it to the rice skillet as well. Stir. Continue cooking covered for about 5 to 10 more minutes. Serve and enjoy!
