I am truly so ready for Fall. The Louisiana heat is about to kill me. Plus, the mosquitos here are monstrous!! Way past due for some cooler temps. I created this recipe one night while cooking dinner. I had been playing around on my Pinterest, (check it out in the link) and was getting so inspired by all the cinnamon, pumpkin, and apple recipes that have been on my feed for fall.
I created this rendition of maple glazed carrots from some ideas I had read amount. I added the blueberry goat cheese, and it ended up being the best flavor combination. Finish off with some roasted pecans and there you have it! Very quick side dish to make with just a few main ingredients.
