I am truly so ready for Fall. The Louisiana heat is about to kill me. Plus, the mosquitos here are monstrous!! Way past due for some cooler temps. Ingredients You Will Need for These Roasted Carrots with Goat Cheese

Carrots:

I used two bunches of carrots. I cut the stems and washed them very good.

Olive Oil:

The base for cooking the carrots down. I used a light tasting olive oil but any kind would work.

Maple Syrup:

Gives the carrots that rich fall flavor. So good.

Seasonings:

I used my usuals. Salt, pepper, garlic powder, onion powder, and Italian seasonings.

Blueberry Goat Cheese:

The main star of the dish. You can find blueberry goat cheese in the deli section of most grocery stores.

Roasted Pecans:

Adds a bit more bite and texture to the dish. Definitely need to add them!

Ingredients
  

  • 2 bunches Large Carrots
  • 1 tbsp Olive Oil
  • 2 tbsp Maple Syrup
Seasonings
  • 1 tsp Pepper
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Italian Seasoning
Toppings
  • Crumbled Blueberry Goat Cheese
  • Chopped Pecans
  • Chopped Parsley

Instructions
 

  • Preheat oven to 375 degrees. Remove all stems from carrots and wash thoroughly. Place them on a baking pan. Add the oil, maple syrup and seasonings.
  • Bake for 35-45 minutes or until carrots are tender. Remove from pan and plate for serving. Top with crumbled blueberry goat cheese, roasted pecans, and fresh parsley. Serve while warm and enjoy!
