I love these parmesan roasted broccoli and carrots. They are so simple to throw together for a quick side dish. All you need is some fresh broccoli florets, baby carrots, some olive oil, seasonings and fresh grated parmesan cheese. Toss them all together and roast for about 20 minutes. I love a good, simple side dish. Something that you can turn the oven on and literally throw together on the pan. This is exactly what this broccoli and carrots recipe is. You’ll just put the veggies on the pan, douse them in lots of olive oil and seasonings, then put plenty of fresh grated parmesan cheese on top. No mixing bowls or anything require. Just a pan to make this savory side dish. Gotta love it.
Equipment You’ll Need
Like I said before, all you’ll need is a baking pan. I used a cheese grater, because I like to grate my parmesan, but that’s up to you. You can buy it already shredded or grated.

Broccoli and Carrots:
I used fresh broccoli and carrots from the produce section of the grocery store. I just don’t think frozen will work as well for this recipe.
Olive Oil and Seasonings:
I used an extra virgin olive oil and a blend of my usual seasonings. I always use salt, pepper, garlic powder, onion powder, and paprika for an all-purpose seasoning. I usually have some already mix together at all times.
I like to buy a block of Parmigiano Reggiano and grate it myself. However, you can always buy shredded parmesan or whatever you prefer.
How to Cook Roasted Broccoli and Carrots with Parmesan Cheese
Preheat your oven to 375 degrees. Add your broccoli and carrots to a baking pan. Drizzle with plenty of olive oil and toss them around the pan.
Mix all of your seasonings together and sprinkle all over the vegetables. Grate plenty of parmesan cheese all over the vegetables.
Roast for about 20 minutes. The vegetables will have started to look brown and roasted. Add more parmesan cheese. Serve and enjoy!
