Equipment You’ll Need

Like I said before, all you’ll need is a baking pan. I used a cheese grater, because I like to grate my parmesan, but that’s up to you. You can buy it already shredded or grated.

I used fresh broccoli and carrots from the produce section of the grocery store. I just don’t think frozen will work as well for this recipe.

Olive Oil and Seasonings:

I used an extra virgin olive oil and a blend of my usual seasonings. I always use salt, pepper, garlic powder, onion powder, and paprika for an all-purpose seasoning. I usually have some already mix together at all times.

Parmesan Cheese:

I like to buy a block of Parmigiano Reggiano and grate it myself. However, you can always buy shredded parmesan or whatever you prefer.

How to Cook Roasted Broccoli and Carrots with Parmesan Cheese

Step One:

Preheat your oven to 375 degrees. Add your broccoli and carrots to a baking pan. Drizzle with plenty of olive oil and toss them around the pan.

Step two:

Mix all of your seasonings together and sprinkle all over the vegetables. Grate plenty of parmesan cheese all over the vegetables.

Step three:

Roast for about 20 minutes. The vegetables will have started to look brown and roasted. Add more parmesan cheese. Serve and enjoy!
