Quick and Easy Beef Enchiladas
These quick and easy beef enchiladas are the perfect choice for when you need a delicious meal prepared in under 30 minutes. I love dinners that I can throw together in a hurry. This is kinda like a beefy enchilada casserole. You make the beefy filling, assemble the enchiladas on top, then pour a salsa over the top. Top with cheese and bake for a quick Mexican dinner.
Equipment You Will Need
The main thing you’ll need is your cast iron skillet. Cast iron is an ideal cooking material for the home cook. It retains heat well and is nonstick, allowing foods to be easily removed from the pan once cooked. No other pan heats evenly and handles like a cast iron skillet. I used my 10-inch square cast iron.

- 2 lbs Ground Beef
- 1/2 Onion, Chopped
- 1/2 Green Bell Pepper, Chopped
- 1 packet Taco Seasoning
- 1 8 oz block Cream Cheese
- 2 cups Salsa
- 2 cups Shredded Cheese
- 5-7 8-Inch Tortillas

How to Make Beef and Cheese Enchiladas
Step one
Preheat your oven to 375 degrees. Add your ground beef to a large skillet. Completely brown your beef at medium to high heat then drain off of the grease. Add in your chopped onion and bell pepper and sauté until vegetables are tender.
step two
Turn heat down to low. Mix in one packet of taco seasoning. Stir thoroughly then add in your block of cream cheese. Mix your beef, one cup of salsa and cream cheese together completely then remove about a third of the mixture and place it in a bowl. Smooth the rest remaining in the skillet out with a spoon or spatula on top.
Step three
Make your enchiladas by adding the set aside beef mixture and shredded cheese to each tortilla. Roll them up and place them on top of the creamy salsa beef. Once all of them are in your skillet. Pour the other cup of salsa on top. Cover with shredded cheese. Bake for 15 or until cheese is bubbly. Serve hot and garnish with jalapenos, cilantro, more salsa or avocado. Enjoy!
