Equipment You’ll Need

You’ll need a large salad bowl for this recipe. I have a few linked from Walmart that I have. I’ve had this wooden one for years, and it’s great. You’ll also maybe need some tongs and a knife to slice with.

Ingredients You’ll Need

Arugula:

You’ll start with a bed of arugula. I personally love arugula and I like the peppery flavor. If you don’t want to use the arugula, then I would use a spring mix.

Real Bacon Bits:

Real bacon bits. I used the storebought kind.

Cherry Tomatoes:

I sliced some multicolor cherry tomatoes.

French Fried Onion:

I love the French fried onions. Somewhat like a crouton for the salad. These are so good and add so much flavor and crunch.

Heart of Palm:

I love the heart of palm. It’s got an artichoke heart-ish flavor. These are so good and pair perfect with the salad.

Avocado:

You’ll need some fresh avocado slices.

Blue Cheese:

The tart blue cheese is sooo good on this salad. You’ll need about a quarter of a cup.

Creamy Avocado Dressing:

For the dressing, you’ll need a whole avocado, lemon juice, olive oil, mayo, and some seasonings.

In a food processor, add all the dressing ingredients. Pulse until smooth. Empty into a small bowl or mason jar. Set aside or in the refrigerator.

  • 1/2 cup French Fried Onion
  • 1 can Heart of Palm, Sliced
  • 1 Avocado, Sliced
  • Chopped Green Onion
  • 1/4 cup Blue Cheese
Creamy Avocado Dressing
  • 1 Avocado
  • 1/4 cup Olive Oil
  • 2 tbsp Mayonnaise
  • Juice of a Lemon
  • 1 tbsp Sugar
  • 1 tbsp Pepper
  • 1 tsp Salt
  • 1 tsp Onion Powder

Instructions
 

  • In a food processor, add all the dressing ingredients. Pulse until smooth. Empty into a small bowl or mason jar. Set aside or in the refrigerator.
  • Add all the ingredients to the salad to a large salad bowl. Add dressing to each individual serving. Enjoy!

Notes

The avocado already in the salad will make it creamy, so you won’t need a lot of dressing. That is why I recommend adding the dressing to individual servings instead of the entire bowl.
