Succotash is basically just a mixture of beans and corn. Traditionally, using lima beans. In this dish, I made it more southern with the bacon and red peppers. This dish also reminds me of a “succotash meets corn maque choux.” Regardless, it’s delicious and an out-of-the-ordinary veggie side dish.
Succotash recipe variations and substitutions:
There are many different ways to make this recipe. I used mostly frozen vegetables. You can always substitute for fresh vegetables or vegetables in a can. It’s totally up to you. You can also use bacon fat instead of butter and just omit the bacon if you don’t have any.
What to serve with succotash?
This is a classic, southern side dish. This is good with anything fried. Fried chicken, fried pork chops, mashed potatoes and gravy. The works. You also need to make this with cornbread.

Equipment You Will Need:
The is not a lot of equipment you will need for this recipe. I used a bigger cast iron skillet and a wooden spoon. I used my shallow 10-inch cast iron, but you can always use whatever skillet you have. I linked these silicone oven mitts that are perfect for handling a hot cast iron.
Ingredients You Will Need:
Bacon:
You can use whatever thickness of bacon you’d like.
Lima Beans:
I used a bag of frozen lima beans, heated them up in the microwave then added them to my skillet. I feel like the canned lima beans are too slimy for this dish.
Corn:
I used a 15 ounce can of whole kernel corn. You can use frozen whole kernels. You’ll need about two cups.
Red Bell Pepper:
Dice up an entire red pepper. I like using the red pepper more so than any other color. The flavor is good, and it adds the perfect amount of color to the dish.
Seasonings:
For the seasonings, I used my usuals. Salt, pepper, garlic powder, onion powder and sugar. I feel like these are the perfect combination for this side dish.
How to store and reheat this recipe:
Store this recipe in an airtight container for up to five days in the refrigerator. You can always reheat this recipe in individual servings in the microwave. If you plan on reheating this as a whole, add the contents back to skillet and warm on low heat with a few tablespoons of butter.
Step by Step How to Make This Simple Succotash Recipe
- Cut up your bacon into little one-inch pieces. Add to your skillet over medium heat. Sauté until fully cooked. Remove from the skillet and place your bacon pieces on a paper towel lined plate. Blot out some of your grease from your skillet.
- Add your diced red pepper to your skillet. Sauté until it starts to become tender. Then add in your beans, corn and seasonings. Add your bacon back to your skillet. Sauté until it all comes together. Serve warm and enjoy!

- 1 Red Bell Pepper
- 1 cup Lima Beans from frozen
- 2 tbsp Butter
- 1/4 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Sugar
