Stuffed Collard Greens

These stuffed collard greens. Just like stuffed cabbage rolls. These are big collard green leaves stuffed with a ground beef, rice and tomato sauce filling. These are so hearty and just a good one pot meal. If you like recipes with collard greens, this is it.
This is basically just an old-fashioned stuffed cabbage roll recipe, except you’ll use collards. The collards hold the filling super well and taste just as delicious. I love recipes with collard greens. I have garden full of them right now, so I’m always trying to come up with new ways to cook them.
Equipment You’ll Need
For equipment, you’ll need a large skillet, a pot to make your sauce in and a pot or rice cooker to cook your rice. It’s kind of a lot of items which I don’t really like to mess up that much stuff while cooking, but these big pots wash out easily.
Ingredients You’ll Need
Ground Beef:
You’ll need one pound of ground beef. It doesn’t matter what fat content the beef is, because you’ll drain it off.
Cooked White Rice:
You’ll need a cup of white rice. You’ll cook it and once it cooked it’ll be about two and a half cups.
Yellow Onion:
You’ll need one yellow onion, chopped.
Collard Greens:
You’ll need about 15 large collard green leaves. Be sure to wash them extremely well before using them. I triple wash mine. If not, you run the chance of them being very gritty.
Butter:
Every good sauce starts with butter.
Minced Garlic:
And minced garlic…
Canned Tomatoes:
You’ll need a can of tomato paste, a big can of tomato sauce, and a can of petite diced tomatoes.
Seasonings:
As for seasonings, I used sugar, salt, pepper, onion powder and hot sauce. You can always doctor it up to your liking.
How to Make These Stuffed Collard Greens
step one:
Preheat your oven to 350 degrees. In a large skillet add in your ground beef. Cook until fully browned then drain off excess fat. Cook the cup of white rice.
step two:
Add in your diced onion and sauté on medium heat until onions are tender. At the same time in another pot, add your butter and minced garlic for your sauce. Sauté for several minutes until the sauce becomes fragrant then add the remaining sauce ingredients. Let it simmer.
step three:
Combine the ground beef and onions with the cooked rice then half of the tomato sauce, then transfer to another bowl. All the while, take your washed collard greens, stuff each one with about two tablespoons of the rice and meat mixture and place in the skillet.
step four:
Repeat this step until the skillet is full then pour the remainder of the sauce over the top. Cover and bake for about 30 minutes. Serve and enjoy!

- 15 +/- Collard Green Leaves
Tomato Sauce
- 2 tbsp Butter
- 2 tbsp Minced Garlic
- 1 can Tomato Paste
- 29 oz can Tomato Sauce with Italian Herbs
- 15 oz can Petite Diced Tomatoes
- 1 tbsp Hot Sauce
- 1 tsp Salt
- 1 tbsp Pepper
- 2 tbsp Sugar
- 1 tbsp Onion Powder
- 1 tbsp Italian Seasonings
