I’m always trying to find a dinner that I can make in a hurry. Sometimes, I get home late and I just feel unprepared. For this recipe, I had two packages of smoked sausage already in my fridge and some cheese tortellini. I whisked a spicy cheese sauce together super quick and my family loved it. This recipe turned out so good. We just served it with a side salad. Quick and easy just like I like it.

Equipment You’ll Need

For this recipe, you’re going to need a large skillet. I like the Staub one that’s 12 inches wide and made out of cast-iron. It is my favorite skillet. I know I link it all the time on my posts, but I used the skillet almost every night. You also need a pot for your tortellini, and then I personally always use wooden spoons to stir with. That’s just me and these are some of my favorites.

Ingredients You’ll Need

Cheese Tortellini:

You’ll need a party package of cheese tortellini. These are usually in the refrigerated section of the grocery store.

Smoked Sausage:

I used two packages of smoked sausage, cut into slices.

Butter & Flour:

This is your roux. It will make the base for your cream sauce.

Heavy Cream:

The creaminess and mega flavor to the creamy cheese sauce.

Velveeta Cheese Sauce:

I personally like using the cheese sauce instead of the blocks of cheese for mixes and sauces. It’s easier to work with and has the same great taste.

Rotel Tomatoes with Green Chiles:

This adds some spice and flavor.

Seasonings:

I used lots of Cajun seasonings, Old Bay, garlic and onion powder, salt, pepper and I believe that’s it. You’ll add these into your sauce, so taste it and add in more or less.

How to Make This Cajun Sausage and Cheese Tortellini

Step one:

Boil tortellini according to the instructions. Once it’s cooked, drain and set aside.

Step two:

Slice sausage and place it in a skillet. Brown it well then remove from the pan.

Step three:

In the same pan, melt butter on medium heat. Add in flour and stir until a paste forms. Add heavy cream and stir until roux is mixed together into the heavy cream.

Step four:

Reduce heat to low, add in the can of Rotel tomatoes then stir in the cheese sauce. Add seasonings to sauce and stir well, still on low.

Step five:

Fold in the browned sausage and then tortellini until it’s fully mixed with the cheese sauce. Serve and enjoy!
