Cheesy Hashbrown Potatoes with Smoked Sausage

These cheesy hashbrown potatoes with smoked sausage. Omg. So good. It’s frozen hashbrown potatoes and vegetables sautéed with smoked sausage in a thick, creamy cheese sauce. This is the perfect cheesy potato side dish. Seriously. Don’t have time, you can also make these cheesy hashbrown potatoes in the crockpot. Ok these cheesy potatoes with sausage are something to talk about. They’re kind of a mix between cheesy mashed potatoes and funeral potatoes. The smoked sausage adds in some flavor and substance. These will go with anything and they’re perfect for a large gathering or potluck!
Equipment You’ll Need
Depending on which way you decided to make these potatoes will depend on what you need. Either way, it’s either just a pot or a pot and a crockpot. Maybe a large spoon and a kitchen knife to chop your veggies.
Ingredients You’ll Need
Smoked Sausage:
I used a 14 oz package of smoked sausage. I cut them into slices before adding them to the pot.
Green Bell Pepper and Yellow Onion:
Chop a yellow onion and green bell pepper. This will cook down with the sausage and just add in some flavor.
Frozen Shredded Hashbrowns:
I used a 26 ounce bag of frozen shredded hashbrowns.
Cheddar Cheese Soup and Chicken Broth:
This was just my base to cook the hashbrowns down in. They both added in more flavor, and I didn’t have to worry about it curdling or cooking too long.
Seasonings:
I used my usual…salt, pepper, garlic and onion powders, paprika and sugar.
Cheddar Cheese:
After everything is fulling cooked down, then add in your cheese. It’ll melt immediately.
Heavy Cream and Sour Cream:
Again, once everything is cooked down, add in some sour cream and heavy cream. This puts these potatoes over the top and so fluffy and rich.
Green Onions:
I garnished these potatoes with green onions. They complement them so well, but this is optional!
How to Make the Stovetop Cheesy Hashbrown Potatoes
Step One:
In a large pot, add sliced smoked sausage. Brown on medium heat for a few minutes. Add in chopped onion and green bell pepper. Sauté for a few minutes.
Step two:
Add in the hashbrowns, cheddar cheese soup, chicken broth and spices. Cover and cook on low for about 15 minutes or until hashbrowns are completely softened and cook.
Step three:
Add in cheddar cheese, heavy cream and sour cream. Stir well. Garnish with some green onions. Serve and enjoy!
How to Make the Crockpot Cheesy Hashbrown Potatoes
Step one:
In a skillet, brown sliced sausage on medium heat for a few minutes. Add in chopped onion and green bell pepper. Sauté for a few minutes then add to the crockpot.
Step two:
Add in the hashbrowns, cheddar cheese soup, chicken broth and spices. Cover and cook on low for at least 4 hours.
Step three:
After time is up, add in cheddar cheese, heavy cream and sour cream. Stir well. Garnish with some green onions. Serve and enjoy!
