I love a good salad recipe. Anything goes with salad. There are no rules. Ever! When we first started dating, Allen would have NEVER touched a salad. Ever! I swear he was the pickiest eater. Now, he wants a salad with most meals. He loved this one! I was so tickled… However, who doesn’t love something packed with bacon and egg and a creamy, sweet dressing. Equipment You’ll Need
Pretty much, all you’ll need is something to fry your bacon in and boil your eggs in. Other than that, maybe a big ole salad bowl and some tongs. Ok and a small dish or jar to mix your dressing in. I always use a mason jar for my dressings. It’s easy to shake and mix them, and if you have leftovers, just store it in the fridge.
Ingredients You’ll Need
You’ll need about two cups of fresh spinach. Be sure and wash it off before you add it to the bowl.
I fried about 5 strips of bacon for this salad. It really doesn’t matter what type or what thickness of bacon that you use.
I put three boiled eggs on the salad. I chopped them up before putting them in the bowl.
Creamy Poppyseed Dressing:
For the dressing, I used mayo, apple cider vinegar, olive oil, poppyseeds, salt, sugar and garlic powder.

Chop bacon and fry it in a skillet until completely cooked. Remove from grease and place on a paper towel.
Add spinach, chopped boiled eggs, and bacon to a large salad bowl.
In a small bowl or mason jar, combine all the ingredients for the dressing. Stir well and serve over the salad. Enjoy!

- 16 oz Fresh Spinach
- 4-5 Strips of Bacon
- 3 Boiled Eggs
Creamy Poppyseed Dressing
- 2 tbsp Mayonnaise
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Olive Oil
- 1 tbsp Sugar
- 1 tbsp Poppyseeds
- 1 tsp Garlic Powder
- Dash of Salt
